Anyone who has brewed coffee at the top of a mountain knows the disappointment: the same beans, the same method, and yet the cup tastes flat, sour, and thin. It is tempting to blame the water, or the fatigue, or the thin air playing tricks on the mind. The truth is more interesting, and it starts with the fact that water does not boil at the same temperature everywhere.
At sea level, water boils at 100 degrees Celsius. Climb to three thousand meters and it boils at closer to 90. Boiling is not about heat so much as pressure: water turns to vapor when its vapor pressure matches the air pushing down on it, and at altitude there is simply less air. Lower pressure, lower boiling point. Your kettle screams just as loudly, but the water inside is meaningfully cooler.
Coffee extraction is exquisitely sensitive to temperature. The compounds that make coffee taste bright and sweet dissolve readily; the ones that make it taste round and full need more heat and time. Brew below about 91 degrees and you pull the acids without the sugars — a cup that is all edges and no body. The mountain has, in effect, under-brewed your coffee before you touched it.
There is a second insult waiting. Altitude changes not just the coffee but the taster. Lower cabin and mountain pressure subtly dulls the tongue's sensitivity to sweet and salty flavors — the same reason airline food is over-seasoned. So the mountaintop delivers a thinner cup to a duller palate. The deck is stacked twice.
The fix is what you would expect: brew longer, grind finer, and if you can, pressurize. This is why espresso machines, which force water through grounds at nine atmospheres, care far less about altitude than a drip cone does. Physics giveth and physics taketh away, but a good pump restores the balance. The next time your summit coffee disappoints, do not blame the beans. Blame the barometer.
